After all, it was the UFC that allowed him to fight in another weight class and it was the UFC that allowed him to box Floyd.

How can they possibly strip him for not defending?

what would be his grounds for suing? the champion clause protects the UFC, not the fighters.

Wouldn't getting strip be beneficial since Conor would no longer be subject to the champion clause?

No, without even seeing their contracts I have zero doubt that the UFC has all rights to strip belts. At most there is a cause stipulation.
