If we assuming current Jon Jones as 99 (from 100) ability fighter, then which scoring we could give to other current LHW and past LHW greats (peaks)?

Current:

DC -?
Gus-?
Rumble - ?
Volkan - ?
Manuwa - ?

All-timers (peaks):

Shogun - ?
Wand - ?
Liddell-?
Randy-?
Evans - ?
Rampage - ?
Machida - ?
Ortiz - ?

If we adjust for average skill level at times of peaks, all of those are above 90 except maybe Volkan and Manuwa.

They end up making every character over 80 to be politically correct

80/100 is essentially a 0% on these scales

This is true, but also so the players who choose those characters can be competitive.

DC - 97
Gus - 95
Rumble - 94
Machida - 86
Shogun - 85
Wand - 85
Rampage - 83
Evans - 80

Liddell - 77
Randy - 73
Ortiz - 69

Jones wouldnt be 99 there would have to be a power sub rating where anthony johnson would be 10/10 and jones would be definitely less than 9/10 so he would not have a total score of 99

Nobody is perfect, Jones should probably be like 95 and (basically) everyone else lower. Except Once In Human History Ronda would be 98 (9/10 striking defense the only weakness :))

Shogun - 32(after tapping to strikes)

2004 Wanderlei, 2005 Shogun and 2009 Machida should all be close to maxed out. They were so damn unstoppable in their primes

In NBA2K its different - Its overall level of player. Jordan had 99 overall with very average 3pt shot.

Personally I'd actually have Jones around 93 or something, just due to the nature of MMA and how many parts there are to it. Jones may be the best of all time, and yet you could still say that he could be faster, certainly could have more power in his hands, better boxing, and while his BJJ is good it's not exactly world class. If in such a game you could create your own character and overcome all those weaknesses/imperfections, I'd say that you'd then see it shoot up to something like 99.

It depends. If you compare them to others in their era, they were very good. If you compare them to current Jones and 2017 standards, not as much.

The same can be said of Frank Shamrock circa 1999. He beat a young Tito who was about 1.5 weight classes bigger. But he'd have little chance against the top MW/LHWs today.

Or there could just be a "Motivated BJ Penn" character.

If Jon was 99, he'd be man enough (with his big, brass balls and dick pills) to snatch that extra 1 and be 100.

Then he'd tell Daniel to suck it.
