Some people just seem to have an issue with food. They can be disciplined in other aspects of their training, but some seem unable to let go of certain stuff.

It's slightly silly to suppose that "discipline" is an all-encompassing construct.

People can be extremely disciplined in some ways, but terribly undisciplined in other ways.

Nick Diaz is a good example. Think of how clean that guy eats and how hard he trains his general conditioning...but yet he couldn't stay away from pot at various points in his career, despite knowing it was against the rules (regardless of how dumb/smart the rule is in the first place).

It's going to vary from person to person.

Some people have their own rituals that they view as all being part of the fight, and that includes everything from the day after their last fight.

Chuck was the kind of guy who indulged in beer outside of fighting, and it gave him a gut, but he never quit mentally in a fight that I can recall.

Overeem, whether or not he was at 205 or Ubereem, always ahd ridiculously low body fat, lots of muscle, and cut weight to just barely make the limit. He was a good example of someone for whom every calorie mattered. He checks out of fights all the time.
