What I mean is, what is the greatest or most significant victory that a fighter has ever gotten in a fight that wasn't for the title? The fighter who lost has to be elite and rarely lose in non-title fights.

Examples:
Wonderboy vs. Rory
Ferguson vs. RDA
JDS vs. Stipe

What is your choice?

Rampage got the TKO before, but seeing iron chinned Chuck get turned into a sack of meat by Rashad who wasn't known for his hands was a genuine holy shit moment.

Sherdog went mad and the shoops were plentiful.
 
Ferg vs Khabib winner is a front runner for this.
 
Werdum vs Fedor has to be #1.

edit: You said UFC, though. Rumble over Gus was a big one after the performance against Jones. Rothwell over Barnett, solely because of the sub.
 
Nate humiliating Conor was pretty good for a low level fighter like Nate.

From recent memory, #12 Rivera beating #2 Faber, I can't think of another fight where a non top 10 guy beat a top 3 guy
 
Anderson - Forrest would be my pick along with Diaz-McGregor.
