trying to remember a fighter's name

Hey,

This has been annoying me. I'm trying to remember the name of a fighter who was in the UFC at one point.

I remember he won by flattening someone out onto their stomach while he had a body triangle locked in, which made his opponent tap. I also remember him saying something about giving all his opponents 'a gentleman's chance' in his post fight speech.

Anyone help me out here?
