I think it is easier to accept that fighters are old and past it when you can see physical signs of old age. If you look at fedor or hendo they look much older than they used to look. It makes it easier to accept that they arent the same fighter.
Anderson however doesn't look that much older than he used too. I think his youthful appearance allows some, not all, of his fans to hold on to dreams of renewing the old run he had when he was seemingly invincible. and I say this as a huge Anderson fan
