I'll be honest, I didn't know that Jose in Portuguese was pronounced as a "J" and not an "h" until about a year ago. I guess that puts me in the ignorant North American category.

It's not really like that. Joe Say Aldo in portuguese would be something like:

Djoe sei Aldo

Because when you say Jay, for a portuguese it sounds like djay. You must remove the "d" sound.

And the é in "sé" (it actually is José) is like the "e" in tennis.
