It depends a bit of the livestock. You wouldn't need that much land for some chickens, or goats. And milk and eggs would go a long ways to making you more independent nutritionally. Plus choose the right land, and there should be plenty of rabbits.
It's not my first choice, but sometimes it's a road I think about when I'm feeling less than optimistic about the way the world is headed, and more misanthropic.

My grandparents have less than two acres and have raised chickens, ducks, turkeys and rabbits there. My parents have about 3.5 acres and have chickens and horses and are looking into raising a cow.
I want more space because I'm more interested in having a manageable wood plot for heating the home with wood, hunting deer, turkey, rabbits, etc, creating a polycylture farm blending animal raising with gardening practices, having more free range practices than traditional agriculture, and most homesteaders I've talked to have said the large wood plot is necessary for any type of real independence.

Permaculture seems awesome. I wish I lived in a place where I could practice it. Once I get my house I'll have a small yard and try to get a little something going. Sustainability is pretty cool.

It's my life's goal to buy a large plot in a mountainous region and set up a self sustaining community.
Not to sound cultish but basically offer free living space to tradesmen who want to live there. Farmers, welders, general metal workers, electricians, etc..
Now.... I just need a couple mil to get the ball rolling.
