Not really a pro fighter but my brother's old high school wrestling coach who i'd wrestle with when i went to my brothers practices as a kid was Jay Valencia, who fought Faber in Faber's pro debut. Jay is mostly known for getting KTFO by Paulo Danatas in kotc, though.

Ivan Menjivar, David Loiseau, Firas Zahabi, and a handful of others from the Tri-Star old guard. I've trained in the same room as many of the newer guys, but not really with them (just because GSP has watched me spar doesn't mean I've trained with him IMO). Montreal isn't my home anymore, so I don't go back often enough. I've also trained with a few non-famous pro boxers.
Menjivar used to be built like a truck. He's short, but walked around at almost 190. He wasn't fat though. He was all muscle. I think he realized that the excess meat wasn't doing him any favours as he needed more speed to compete at the highest levels. When I first sparred with him, I was known as the leg kick guy around the gym. They threw me in against him because he wasn't used to leg kicks. For about two weeks I could slap him around by taking out his legs at will. Those were the days. By week three, he was used to it, and I could never touch him again. The guy learned and adapted to everything new ridiculously quickly.
I remember Loiseau coming back being upset about the Franklin decision. He bloodied Franklin with a lot of elbows and felt that the judges scorecards should have reflected that fact. For what it's worth, I see his point. He was always full of energy and brightened up the gym.
Firas is and always was a class act. Back in the early days (before he was heard of on Sherdog), he had a difficult time with Muay Thai. I remember in his first fight, he was so used to grappling that he started to go for a take-down and nearly caught a knee to the face, which was illegal under the Quebec amateur rules, but it frankly would have been his own fault. After an awkward time resisting his urges to tear his opponent's limbs off, he settled down and won. Firas did become an excellent thai boxer, but even then his best talents lay in communication. I'm not surprised that he's been so successful as a trainer. He worked hard at it and he has a natural talent for teaching.
