I wish I could find a link where the difference has been explained. This is a Marcelo Garcia style guillotine. The McKenzie one is also called the Prayer guillotine, and the support hand palms the bottom of the choking fist, and pushes up the choking arm. The idea with the Marcelo/high-elbow is to block their shoulder so they cannot drive in with their shoulder to flatten you out. They are actually almost opposite. In a way, one is pulling and one is pushing.

I've been doing my guillotines like this since I seen a video of Marcelo saying its the way he does them, and I actually finish guillotines alot more often then I did.

also the prayer choke is really strong but i find it hard to get your arm in under there neck as deep as you need to, to finish it.

With prayer chokes, I treat them like a dan Severn (gable grip) to a rnc. In other words, I shoot from the prayer to a fnc. It makes it way easier to get deep IMO, because there is more emphasis on pulling your elbow deep.

it seems when you get your opposite arm trapped triangle style none can defend.

if your arm isn't trapped, is a good defense to pull his elbow down? Or perhaps slide your hand through the loop to break his grip (although this would temporarily tighten the grip)

Honestly as soon as the elbow goes up it's like locking an RNC. Pulling the elbow down would be a good defense, but if they're good with the choke they will slam down on your arm with their leg and trap it. Marcelo emphasizes to do that if they pull your elbow down.

The best I've managed is to front flip or try to scramble out and hope that I can get out before they can ride it over to the mount. Hard to stop it once it's on.
